Fact: Bianchetto Truffle is very similar to the White Alba Truffle. They are less expensive and found in the same region as the white truffle and run later in the season.

Flavour: Garlicky, earthy, pungent, and musky

Availability: January to April

Shape and Size: Irregular shape and average size

Suitable For: Appetizers, meat, fish, canapés with melted cheese and butter. Base for pasta dishes; dumplings or Cappelletti. Pair it with raw seafood, ravioli stuffed with fish sauce.
